  • CRAWFISH, SHRIMP & ANDOUILLE SAUSAGE FRIED RICE RECIPE:

    4 cups day old cold rice
    8 oz cooked crawfish tail meat
    10-12 shrimp, tail off and deveined
    2 andouille sausages, sliced and then quartered
    1/2 cup onion, chopped
    1/2 cup bell pepper, chopped
    2 stalks green onions, sliced
    2 eggs, lightly beaten
    5 tbsp vegetable oil, divided
    1/2 tsp seafood seasoning
    1 tsp garlic powder
    1 tsp onion powder
    1/4 tsp cayenne pepper
    1/2 tsp chili powder
    1/2 tsp oregano
    1 tbsp sugar
    2 tbsp soy sauce
    Salt and pepper to taste

    Season shrimp with 1/2 tsp seafood seasoning & 1 tbsp oil.

    In a skillet over medium high heat add 2 tbsp oil and cook shrimp on each side 2-3 minutes until shrimp make a nice C shape. Remove from pan and add in sausage, cooking until browned. Remove from pan.

    Add in bell peppers and onions, cooking approximately 4 minutes before scooting over to one side and add in the eggs. Scramble the eggs and then mix the onions/peppers with the eggs. Scoot everything to the side and add in the remaining oil and then cold rice, breaking up with your spatula. Add in remaining seasonings, sugar and soy sauce. Add in the crawfish tails. Give everything a stir and allow to cook a minute or two before adding the shrimp, sausage and green onions. Enjoy!

    Joseph Jackson is the fourth of eight children born to Ernest and Octavia Jackson in Harvey, “Jefferson Parish”, Louisiana.
    At the age of 17 he went to work as an oil field tool maintenance helper. He was accepted in the United States Army at the age of 18.
    He went to television repair school at night, and later owned and operated a Radio and Television Repair Shop part-time for 7 years in Fayetteville, North Carolina.
    His early efforts led to the precursor of the V-Chip, technology that is used in the television industry to block out violent and objectionable programs that could be seen by young children. Mr. Jackson is the creator of the Programmable Television Receiver Controllers and other innovative devices for the television industry.
    Joseph Jackson is the holder of at least 6 issued U.S. Patents in the area of telecommunications and Fertility Prediction Devices for females, as well as several copyrights, trademarks, and Pending Patents in the area or Aircraft security and Tracking Systems.

It's also the longest continuous bridge over water in the world. The bridge connects New Orleans with smaller communities on the north shore of the lake and is comprised of two parallel bridges supported by 9,500 concrete pilings.

    Constructed by The Louisiana Bridge Company, the southbound lane of the Causeway was completed in 1956. The parallel northbound bridge was added in 1969, linking the communities of Metairie and Mandeville. This impressive feat of engineering held the Guinness World Record for the longest bridge over water until 2011, when China's Jiaozhou Bay Bridge claimed the title.
